Tortilla
Wraps
A marvelous hors d'ouevre. Use medium or large flour tortillas.
Spread with softened cream cheese, add a slice of smoked turkey
or ham leaving 2" of cream cheese exposed on one side. Spread
meat with Hot Pepper Jelly (spicy
or extra spicy) or Incredible
Cranberries (regular or mildly spicy). Roll up from the
meat side so cream cheese edge makes a seal. Seal rolls in plastic
wrap and put in refrigerator for several hours or up to a day. Slice
in 3/4" rounds & serve - YUM!
Chicken Delight
Skin 4 to 6 chicken breasts. Place them side by side in a baking
dish. Sprinkle with a package of dried onion soup. Spoon over
the top one jar of Incredible
Cranberries (regular or mildly spicy) or Razz'l
Cran Jam (regular or spicy). Add a splash of dry white wine.
Cover tightly with foil. Bake 350 for about one hour. When
done you may wish to slightly thicken the sauce. Serve chicken with
this delectable sauce spooned over the top. Good served with rice!
Pepper-Pepper-Pepper Chicken
In a large skillet cook covered 4 to 6 chicken breasts, skin side up,
with 1/3 to 1/2 cup water until almost done. Cook over very low
heat so juices accumulate. Remove skin, turn chicken over until
done. Remove chicken from skillet. Into small amount of juice
left in skillet, add 1/4 large red onion in 1/4" slices; 1/3 each
yellow, red and green bell pepper also in 1/4" thick, but long slices;
12 black olives cut in half with 3 T. olive juice. Sauté
until slightly crisp and add 1/3 cup vermouth. Stir. Add 3
T. Hot Pepper Jelly (spicy or
extra spicy) and stir until melted. Remove bones from chicken and
add in large pieces stirring to coat. This is not only delicious
but also a beautiful dish. Serve with rice or couscous.

House Beef Brisket
Place a 3 to 4 lb. brisket on sheet of foil. Salt and pepper to
taste and slice onion over top. Cover with jar of Hot
Pepper Jelly, Incredible
Cranberries, or Razz'l Cran Jam
(you can use either variety of each). Seal well, place in baking
dish and bake for about 3 hours at 350.
Hot Pepper Jelly Marinade and Baste
Sauté 1 or 2 cloves of minced garlic (or to taste) in a little
olive oil. Add 1/4 cup of dry white wine or vermouth, 1/3 cup Dijon
mustard, 1 T. Worcestershire sauce, and 1/3 cup (or more to taste) Hot
Pepper Jelly (spicy or extra spicy). Stir till liquid, add
more wine if needed. Use as marinade and as a final baste for meaty
fish fillets (such as tuna, salmon, bass and trout) cooked on your grill.
Remember NOT to overcook fish!
Roast Turkey, Incredible Cranberry Style
Before stuffing, generously coat cavity of turkey with Incredible
Cranberries (may take whole jar). Then stuff and
roast as usual. Juices, and gravy made from them, will have a wonderful
unique flavor. Serve a side dish of Incredible
Cranberries (regular or mildly spicy) along with, or instead of,
cranberry sauce with your turkey dinner.
